Sailfish Analyzer 5 has been recently updated to work with Windows 10. It has long been a good way to generate a set of starting polars for various sail sets provided you know your boat's physical data well or are willing to obtain that data.
There are basically two ways to generate polars:
Techsail is a good way to develop polars using the second method.
Yacht Data, Hull, Rig, Sail, Plan, Speed, Polar, Tack, Figure, Time, Target, Compare, Wizard.

If you choose Export → Save As Another File Type → Choose File format →OpenCPN Polar Files
Regarding Hulls with traditional full keels and props in an aperture, some of the necessary data is missing.
I have used this software for a number of years, to develop an understand for the appropriate size of my headsails, and we do have a full keel, but I do miss the graphic and data for a full keel and prop aperture that was in previous versions.
